A Healthy Plant-Based Whole Food Smoothie
I don’t know about you but I can’t go the entire morning without at least two breakfasts. I’ve always eaten 5-7 smaller meals/snacks per day, even prior to going plant-based. There was an episode of “The Office” a few years back where Pam was pregnant and Kevin talked about how he had started eating his meals with Pam a lot. Not all of them, just second breakfast, lunch, second lunch, and first dinner. I had to chuckle at that because he was describing my life!
That’s how I roll. I typically eat a bowl of cereal or oatmeal at home, and then have something else mid-morning like a soy latte, a piece of homemade veggie bread, or some raw carrots. Or I make a smoothie, like this Green Dream Smoothie, drink it on the way to work, and then have my cereal or oatmeal mid-morning.
This Green Dream smoothie gives a healthy, refreshing burst of nutrients from the fresh fruits and leafy greens, along with a little bit of creaminess to thicken things up. Sometimes I change things up but lately this is pretty much what I’ve been sticking to.

Description
This refreshing smoothie packs in the nutrients for a healthy and tasty snack any time of the day.
Ingredients
- 2 cups spinach
- ½ cup berries of your choice
- 1 ripe banana
- 1 tablespoon peanut butter (or other nut butter)
- ½ cup non-dairy milk (can adjust this amount based on how thick or thin you like your smoothies)
- Handful of ice cubes
Instructions
- Add everything to your blender, set it to high and let ‘er rip until smooth.
Notes
We go through bananas pretty quickly in this house and I can’t always ensure that I have one at the proper level of ripeness or even one at all sometimes! What I do is buy a bunch of bananas (and forbid anyone from touching them), wait until they ripen, slice them into 1” sections and then freeze them. Then I always have bananas of the perfect ripeness on hand when I need them. Warning: don’t freeze the bananas if they are wet. I cut them once on a wet cutting board and threw them into a freezer bag. Now I have a rock-solid mass of stuck together bananas that are not fun to separate.
