This fresh, healthy salsa has just the right amount of zing and taste.
Ingredients

- 6 Roma tomatoes, chopped
- 1/4 yellow onion, finely chopped
- 2 tablespoons lime juice (about 1 lime)
- 1/2 cup loosely packed cilantro leaves, roughly chopped
- 1 clove fresh garlic, minced
- 1 teaspoon diced jalapeno pepper (optional or as to taste)
Instructions
- Combine all ingredients in a bowl.
- Makes about 3 cups
Notes
Switch things up by using different varieties of tomatoes. In the summer, visit your local farmers market or your own garden to get a wider variety. Firmer tomatoes will work a bit better in this recipe.
